This breakfast is a sweet, healthy alternative to a pre-made jam that normally comes with these kinds of yoghurts. The thick greek yoghurt is complemented with sweet, juicy grapes and finished with a little honey and some thyme leaves. It truly is a delicious, indulgent and guilt free breakfast.

I like grapes two ways, cold from the fridge, or roasted. I’m weirdly indifferent about room temperature grapes. Cold grapes are so thirst quenching and fresh, there’s something about the sweet coldness that is just divine. Roasted grapes on the other hand, are sticky, sweet, soft and sultry. The skins shrink and soften, allowing the liquids of the grape to come out and make a sticky sauce that will accompany the yoghurt. You hardly need any other sweetener with this, I chose just a small drizzle of honey, but there’s really no need for anything.

As for yoghurt, I chose greek yoghurt. The reason being it is so thick, that I could create a well in the middle which would hold the grapes in. You could use any kind of yoghurt you like though, I have a feeling vanilla yoghurt would work extremely well!

Roasted Red Grapes over Yoghurt with Honey and Thyme

Ingredients

Bunch of Red Grapes
2 Teaspoons Olive Oil
Pinch of Salt
Honey
Greek Yoghurt
Fresh Thyme Leaves
Crushed Walnuts

Steps

1. Preheat the oven to 160 degrees Celsius.

2. Lay the grapes on a baking tray and drizzle with the olive oil and sprinkle on a small pinch of salt.

3. Roast for 30-35 minutes until the grapes have shrunk a little and the liquid is just bubbling outside them.

4. Place the yoghurt in a bowl and spoon over grapes. Drizzle with honey, sprinkle on the thyme leaves and crushed walnuts. Serve immediately.
