Ingredients
2ounceslight cream cheeseat room temperature
1tablespoonlow-fat plain Greek yogurt
1tablespoonfresh chivessliced
1tablespoonfresh dillchopped
1/4teaspoonground pepper
2sliceswhole-grain sandwich bread
1/3cupEnglish cucumberthinly sliced
Instructions
Cut the cucumber into 1/8-inch thin slices using a mandolin or sharp knife. Place the slices on paper towels and sprinkle with coarse salt. Let rest for 15-30 minutes to extract moisture. Pat dry with clean paper towels.
Stir cream cheese, yogurt, chives, dill and pepper together in a small bowl until well blended.
Spread one side of each slice of bread with the cream cheese mixture.
Top one slice of the bread with cucumber slices and then place the other slice on top.
If desired, cut the crusts of the bread and cut into quarters for tea sandwich style. Or just slice the whole thing in half diagonally for a refreshing and nutritious lunch sandwich.
Notes
This can be cut in half and served as a regular lunch sandwich, but cutting the crust off and slicing into squares turns them into cucumber tea sandwiches, a classic appetizer often served at tea parties, baby showers, etc.Normally mayo would be used, but we're using Greek yogurt. Combining the yogurt with the cream cheese gives it a creamier texture for easier spreading as well as a more balanced flavor.Stick with fresh dill and chives. Dried herbs are great for some recipes, but they won't be as good with this recipe.
